Here's a classic Twice Baked Potato recipe from Idaho.
1) Scrub and rinse potatoes well.
2) Grease lightly with butter or oil, and pierce with a fork two or three times.
3) Bake in a 400° oven for about 1 hour.
4) Remove potatoes from oven.
5) When cool enough to handle, split potatoes lengthwise and carefully scoop out potato into a bowl, leaving the skins intact.
6) Add remaining ingredients, except egg, and beat well.
7) Add egg and beat until smooth.
