GREEN CHILI BREAKFAST BURRITO

Ingredients:

  • 6 large eggs
  • 3 egg whites
  • 1 minced jalapeno pepper
  • dash of cayenne pepper
  • 4 breakfast sausage links
  • 3/4 cup of shredded Mexican 3-cheese blend
  • 1 small can of chopped green chiles
  • 6 flour tortillas
  • 1 cup of salsa



Directions:

  1. Whisk eggs, egg whites, jalapeno, and cayenne in a small bowl, and set aside.
  2. Crumble sausage into small pieces and brown in a skillet over medium heat.
  3. Move sausages toward the edges of the pan, and pour egg mixture into the middle of the pan.
  4. Stir until cooked.
  5. Sprinkle with cheese and chili peppers
  6. Remove from heat, cover, and let stand until cheese melts.
  7. Place about 1/3 cup onto each tortilla. 
  8. Fold in the sides of the tortilla and roll it up.  




Although heavily influenced by Mexican cuisine, New Mexico has a unique cuisine of its own, with red and green chile peppers at its heart.

Here's a zesty chile pepper recipe from an excellent cookbook called Cocinas de New Mexico, published by the Public Service Company of New Mexico:




CHILE RELLENOS DULCES

(Sweet Green Chile Meat Balls)


INGREDIENTS:

  • Shortening
  • 1 cup chopped raisins
  • 1 egg
  • 1 1/2 teaspoons allspice
  • 2 pounds boiled ground beef or pork
  • 1 cup chopped green chiles
  • 1 1/2 cups brown sugar
  • 1 cup flour
  • 1 teaspoon salt



DIRECTIONS:

  1. Heat 2-inches of shortening in a heavy pan on a medium-high heat.
  2. Beat the egg and milk in a small mixing bowl. Set aside.
  3. Combine the meat, sugar, raisins, allspice, salt, and chili with 2 tablespoons of the egg mixture.
  4. Form the mixture into balls measuring roughly 1/2 inch in diameter. 
  5. Dip each ball into the remaining egg mixture, and roll each one in flour.
  6. Fry the sweet chili meat balls in hot shortening until golden. 
  7. Drain on absorbent towels. 


This recipe yields approximately 3-4 dozen meatballs.
