To start with, you will need one tall twelve-ounce glass for each individual serving.
Place a one-inch layer of each of the following ingredients, IN THE ORDER SHOWN HERE, pressing down firmly on each new added layer as you go:
2 tablespoons of your favorite salad dressing (raspberry vinaigrette is highly recommended).
raw shredded carrots
chopped hard boiled egg
pitted, chopped black olives
chopped green or yellow bell peppers
sliced canned beets
Press down firmly on the final ingredient layer.
Cover each glass with cling plastic wrap and refrigerate until serving time.
When ready to serve, arrange some fresh lettuce leaves on each salad plate.
Overturn each glass onto the lettuce on each plate.
Let the glasses sit for about five minutes while the dressing drips down through the layers.
Carefully lift and remove each glass.
This recipe is limited only by your imagination. Use other veggies like onions, cauliflower or edamame (green soybeans).
