You will be placing a one-inch layer of each of the following ingredients, IN THE ORDER SHOWN HERE, pressing down firmly on each new added layer as you go:

  • 2 tablespoons of your favorite salad dressing (raspberry vinaigrette is highly recommended).
  • raw shredded carrots
  • chopped avocado

  • chopped hard boiled egg
  • pitted, chopped black olives
  • chopped tomatoes
  • chopped green or yellow bell peppers
  • sliced canned beets

  1. Press down firmly on the final ingredient layer.
  2. Cover each glass with cling plastic wrap and refrigerate until serving time.
  3. When ready to serve, arrange some fresh lettuce leaves on each salad plate.

  5. Let the glasses sit for about five minutes while the dressing drips down through the layers.
  6. Carefully lift and remove each glass.
  7. Serve immediately.
  8. This recipe is limited only by your imagination. Use other veggies such as onions, cauliflower or edamame (green soybeans).
