Try these superb Pork Tenderloin Recipes.

The word "tenderloin" refers to the psoas major muscle along the central spine portion of the back of an animal. This is the most tender part of the animal, because these muscles are used for posture rather than movement.

Here is a great recipe for a super easy-to-make, totally tasty pork tenderloin dinner.

Pork Tenderloin Recipes

PORK TENDERLOIN WITH CRANBERRY GLAZE

INGREDIENTS:

• 2 pork tenderloins, about 1 pound each
• 2 large cloves garlic
• 1/2 teaspoon ground cumin
• 1/2 teaspoon thyme
• 1/2 teaspoon ground cinnamon 
• 1/2 teaspoon of ground allspice
• dash of ground cloves
• 1/4 teaspoon of salt
• 1/8 teaspoon of black pepper
• About one pound frozen cranberries
• 1 (12 ounce) can of mandarin orange slices in lite syrup
• 1/2 cup of sugar
• juice and zest from one orange

DIRECTIONS:

1. Heat the oven to 425° Fahrenheit. Lightly oil a roasting pan.
2. Trim the excess fat from the pork tenderloins.
3. Mince the garlic and blend it with the cumin, thyme, cinnamon, allspice, and cloves.
4. Add 2 teaspoons of vegetable oil to the garlic, herbs and spice mixture.
5. Rub the spice mixture all over the pork tenderloins.
6. Roast for about one hour.
7. Meanwhile, in a saucepan, combine the cranberries, mandarin orange slices with syrup, orange juice with zest, and sugar.
8. Bring the glaze to a boil. Reduce heat and simmer for about 8 to 10 minutes, or until the mixture is thickened.
9. Spoon some of the cranberry mixture over the pork tenderloins and roast them for about another five minutes longer.
10. Heat the remaining cranberry mixture to serve with the slices of pork.

SUGGESTION: This dish goes well with a side of sweet potatoes and fresh collard greens or beet greens sauteed lightly in olive oil.
