GREEN CUPCAKES
When it comes to Irish Dessert Recipes, there is nothing like a touch of green in your cuisine. For a fun way to celebrate the season, try any of these deliciously cool green recipe ideas.
DIRECTIONS:
Make one or two dozen cupcakes from your favorite yellow cake mix.
Add 3-4 drops of Blue food coloring into the mix before baking.
In a bowl, mix with a fork
add 1/2 a stick of softened butter,
add 1/2 a teaspoon vanilla extract,
add 3-4 drops green food coloring (or 3 drops of yellow and 1 drop of blue),
add 1 Tablespoon of milk, and
add 1 cup of confectioner's sugar, pouring the sugar a little bit at a time until the frosting reaches desired consistency.
LET CUPCAKES COOL THOROUGHLY.
When cupcakes reach room temperature, add frosting to the cupcakes.
Garnish each cupcake with a green gum drop or green M&Ms. Maybe even shaved chocolate or crushed hard candy.
GREEN IRISH WHISKEY SOUR JELLO SHOTS
INGREDIENTS:
1 packet Lemon Jell-o
1 packet Lime Jell-o
2 Cups Boiling Water
1 1/2 Cups Cold Water
1/2 Cup Irish Whiskey
DIRECTIONS:
Prepare according to package instructions, using ingredients listed above.
Chill Jell-o in square or rectangular dish.
Cut into squares.
Garnish each square with a dollop of whipped cream.

GREEN SMOOTHIES
SMOOTHIE #1
INGREDIENTS:
2 cups firmly-packed fresh kale
1 cup unsweetened pineapple chunks
1-1/2 cups pineapple-coconut juice or plain pineapple juice
1/2 cup vanilla yogurt
DIRECTIONS:
Blend Kale first.
Add remaining ingredients.
Blend until smooth.
Serve in tall glasses with wide drink straws.
SERVES 2.
SMOOTHIE #2
INGREDIENTS:
2 fresh bananas.
1 cup unsweetened pineapple chunks
1-1/2 cups Pina Colada mix
1/2 cup vanilla ice cream or frozen yogurt
Food Coloring
DIRECTIONS:
Cut bananas into slices.
Blend half of all the ingredients (EXCEPT the food coloring) in a blender until smooth.
Pour mixture into a tall milkshake glass.
Add remaining ingredients and repeat the above steps.
Add a few drops of green (or Blue with Yellow) food coloring to each glass.
Mix gently with a straw to distribute the coloring evenly.
If desired, garnish with fresh banana slices.
SERVES 2.
