Easy Banana Bread Recipe

INGREDIENTS:

  • 1/2 cup softened butter
  • 1/2 cup white sugar
  • 1 egg
  • 1 cup mashed bananas
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda



DIRECTIONS:

  1. Mash butter with a fork until creamy.
  2. Gradually add the white sugar, and mix until light and fluffy.
  3. Add beaten egg and blend well.
  4. Mix in mashed bananas and vanilla extract.
  5. In a small bowl, mix flour, baking powder, and baking soda. 
  6. Add dry ingredients to the mix, and blend until batter is moist.
  7. Line a muffin pan with foil or paper cupcake liners.
  8. Pour batter into liners, filling each on about two thirds full. 
  9. Bake at 350 degrees F (175 degrees C) for about 40 minutes, or until muffins are browned on top. 
  10. Let muffins cool for 10 minutes.



Another Easy Banana Bread Recipe


APPLE BUTTER BANANA BREAD


INGREDIENTS:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon pumpkin pie spice
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 slightly beaten eggs
  • 1/2 cup sugar
  • 2 small mashed ripe bananas and 1 fresh sliced banana.
  • 1/3 cup apple butter
  • A bit less than 1/4 cup cooking oil




DIRECTIONS:

  1. Preheat oven to 350 degrees F.
  2. Grease and flour the bottom and 1/2 inch up the sides of a glass loaf pan; set aside.
  3. In a large bowl combine flour, baking powder, pie spice, baking soda and salt.
  4. Make a well in center of the flour mixture; set aside.
  5. In a medium bowl combine beaten eggs, sugar, mashed banana, apple butter and oil.
  6. Add the egg mixture all at once to the flour mixture.
  7. Stir just until moistened (batter should be lumpy).
  8. Spoon batter into prepared pan.
  9. Bake in the oven 30-40 minutes, or until the top is browned and a wooden toothpick inserted near center comes out clean.
  10. Remove pan from oven and let cool for 10 minutes.
  11. Remove from pan and let cool.
  12. Wrap and store overnight before slicing.
  13. When ready to serve, put a slice in the microwave for 15-20 seconds.
  14. Top each piece with fresh sliced bananas and serve it warm.
